Pan-fried Eggplant in Teriyaki Sauce
烧汁煎酿茄子
Ingredients 配料
Eggplant 茄子
Minced Pork 猪肉糜
Shiitake mushroom 香菇
Shrimp 虾仁
Oyster oil 蚝油
Salt 盐
Chicken powder 鸡粉
Sugar 糖
Egg 鸡蛋
Potato starch 生粉
Pepper powder 胡椒粉
Teriyaki sauce 烧汁
Method
1. Cut the eggplant into "butterfly" slices (each slice consists of two pieces link together on one side).
2. Mix diced shiitake mushroom, diced shrimp and minced pork. Add oyster oil, salt, chicken powder, sugar, egg white, pepper powder and potato starch, mix well and marinate for a while.
3. Stuff the eggplant pieces with the marinated mixture.
4. In a pan, heat 1 tablespoon of oil. Pan-fry the eggplant until well done. Then add Teriyaki sauce, cook until boiling. Thicken the sauce with starch. Arrange in a plate and serve.

2. 将香菇、虾仁切成小粒与猪肉糜一起,加入蚝油、盐、鸡粉、糖、鸡蛋、胡椒粉、生粉拌匀。
3. 将制好的馅料酿入茄子中。
4. 在平底锅中加入色拉油,将茄子煎熟,加入韩国烧汁一起烧开,勾芡,装盆即可
