Crab Roe with Broccoli
花开显富贵
Ingredients 配料
1 pc Crab 一只 膏蟹
500 g Broccoli 500克 西兰花
250 ml Chicken stock 250毫升鸡汤
Salt 盐
2 pc Egg white 2只 蛋白
50 g Oil 50克 油
25 g Cooking wine 25克 料酒
Ginger 姜
Spring onion stem 葱白
Potato starch 生粉
Method
1. Steam the crab. After it cools down, take out the crab roe and meat, discard the shell.
2. Cut broccoli into small chunks. Blanch in boiling water until just done. Remove and arrange them into the plate.
3. Add some oil into the wok. Then pour off the extra oil, only leave a little oil in the wok. Add some cooking wine into the wok. Stir-fry the ginger and spring onion until fragrant. Add in chicken stock, salt, crab roe meat. Thicken with potato starch. Stir in the egg white to make white floating slices. Add crab roe and oil the soup. Pour the soup over the broccoli and serve.
烹调步骤
1. 将膏蟹膏黄取出,肉蒸熟拆肉备用 。
2. 西兰花改成小朵焯水断生,取出放入盆中。
3. 锅中放油划一下,去油加酒,姜,葱白爆香, 加入鸡汤、盐、蟹肉,勾欠,淋入蛋白, 蟹膏黄放入煮开浇在西兰花上即可。
