Mandarin Fish with Ham

Ingredients 配料
8 Jinhua ham 8片 金华火腿
4 Shiitake mushrooms 4只 香菇
1 Mandarin fish 1条 桂鱼
3 Egg 3只 鸡蛋
500 g Clear chicken soup 500克 清鸡汤
Salt 盐
Sugar 糖
Chicken powder 鸡粉
Method
1. Separate egg white from the eggs. Add ź teaspoon of salt into fresh water. Mix with the egg white and steam for 10 minutes. Set aside.
2. Cut off the flesh from the fish. Cut into 8 pieces in rectangle shapes. Mix 1/5 tsp of salt, ź tsp of chicken powder, a little sugar, 1/5 tsp of corn starch and some water. Coat the fish with the mixture.
3. Arrange the fish slices, ham and steamed egg white in layers. Steam for 8 minutes.

1. 先将鸡蛋去黄留蛋清,在清水中放入ź茶匙盐,和蛋清搅拌放在蒸锅内蒸10 分钟备用。
2. 桂鱼起肉,切成8块长方形,盐放1/5茶匙,鸡粉1/4茶匙,糖少许,生粉 1/5 茶匙,清水少许涂上。
3. 将桂鱼肉,云腿片,香菇片,一层层放上以蒸好的蛋清上蒸8分钟可成。
