酸橘汁腌海鲜配蔬菜莎莎酱
墨西哥菜Scallops扇贝 60g
Mussels 青口贝40g
Shrimps 虾仁 60g
Squid 鱿鱼40g
Coriander 香菜10g
Red Onion 红洋葱40g
Tomato 蕃茄60g
Green Chili 青尖椒20g
Corn Kernel Tin 罐装栗米粒1pc
Palm Hearts Tin 罐装棕榈芯1pc
Potato Boiled 熟土豆100g
Lemon Juice 柠檬汁100ml
Lime Juice 青柠汁100ml
Salt 盐

-Poach seafood in bouillon and cool down in ice bath 海鲜在高汤里焯水后用冰水冷却备用
扇贝焯烧开盐水至多两分钟(关键一点,不必煮熟 肉质会老),也可以加柠檬片去腥味,然后放在冷水里冷却,切丁,加入柠檬汁在冰箱里腌制一整晚。
-Dice boiled potato and palm heart in small brunoise 熟土豆和棕榈芯切丁备用
盐水煮熟土豆,然后冷却,可以买灌装笋,切小丁 ,玉米粒
-Dice tomato, red onion, green chili in small brunoise 蕃茄, 红洋葱, 青尖椒切丁备用
番茄去籽部分,留皮部分,切小丁,番茄洋葱比例2:1,红洋葱(紫色表皮),尖椒切小圈,不用搅碎
-Slice coriander in chiffonade 香菜切碎备用
--Mix all diced ingredients in a bowl and season 混合所有原料并调味
-Add lemon and lime juice to the seafood and season 将柠檬汁和青柠汁加入海鲜并调味
-Add brunoise vegetables to seafood and check seasoning 将所有蔬菜丁和海鲜拌匀并调味
加入盐,胡椒粉
-Add olive oil 加入橄榄油
放入冰箱腌制半小时
Serve in Martini glass with corn chips 装入马天尼酒杯并配上脆玉米片
