Wok-Fried Prawn Ball with Asparagus in Black Pepper Sauce
黑椒芦笋炒虾球
Ingredients 配料
250 g Prawn ball 250克 虾球
500 g Asparagus 500克 芦笋
10 g Black pepper powder 10克 黑椒粉
10 g Shallot (sliced) 10克 小红洋葱
10 g Garlic (sliced) 10克 蒜片
10 g Ginger (sliced) 10克 姜片
20 g Oyster sauce 20克 蚝油
10 g Chicken powder 10克 鸡精
10 g Sugar 10克 糖
10 g Dark soya sauce 10克 老抽
25 g Corn starch 25克 生粉
Method
1. Peel the prawns. Marinate them with salt, chicken powder and corn starch.
2. Chop the asparagus into thumb-long pieces. Slice the shallot, garlic and ginger.
3. Mix chicken powder, sugar and oyster sauce to make a sauce.
4. Heat some oil and lightly fry the prawns (it will curl up into balls) and the asparagus. Set aside
5. Heat some oil and stir-fry the shallot, garlic and ginger until fragrant. Add in the prawn balls and asparagus, and mix well. Add in the sauce, and use corn starch to coat the materials. Serve with black pepper powder sprinkled on top.
烹调步骤
1. 虾球切配,加盐,鸡精,生粉腌制备用。
2. 芦笋切寸段,小红洋葱片、蒜片和姜片切好备用。
3. 鸡精,糖,蚝油,配好调和备用。
4. 清油加热,虾球芦笋一起过油后捞起。
5. 再起热锅,香料下锅爆香后,虾球芦笋进锅翻炒后下调味料,勾芡后装盘,再撒上黑胡椒粉。
