Curd – 1/8 padi

Salt – 4 palam

Kayam Asafoetida – 1/8 palam

All the three can be put in a lead coated plate, then the dried chillies are also put in this and mixed for 2 days and then on the 3rd day morning this is dried in sunlight.

After it is dried for 2 or 3 days, as said above again this is mixed with 3 above ingredients soaked, and then dried.

This dried vatral whenever needed can be taken and fried by oil or ghee, and used.

269.Vegetable vathal 腌蔬菜
Ladys finger, Sundakkai (turkey berry), Bitter gourd, Kothavarangai (cluster beans), manathakalikai (sun berry), kuruma thangai, kathirikai (brinjal), avaraikai (English bean) are the vegetables.
秋葵,Sundaikai(土耳其浆果),苦瓜,Kothavarangai (瓜尔豆), manathakalikai (欧洲龙葵), kurumathangai(胡萝卜), kathirikai ( 茄子), avaraikai (海军豆) 为蔬菜。
In these vegetables, take the tender ones.
在这些蔬菜中,取嫩的。
Cut lady’s finger’s in such a way that both the top and bottom tip ends are cut, then cut the vegetable into small pieces of ½ inches of long size pieces;
same way cut the bitter guards both the top and bottom tip ends and then cut them into round shapes.

Instead of cutting, crush the turkey berry. Cut the brinjals into long pieces. cut the Kuruma Thangai into round shapes. Take the sun berry, English bean and cluster beans as they are and get them all dried separately. After drying they are called vattals.

In any one of the above vattal take anyone variety and get it fried in ghee or oil. Then sprinkle powdered salt on them and use as fried vattals.

Or we can use them in kuzhambu instead of using vegetables. (Kuzhmabu is a spicy liquid dish used with rice ) 或者我们可以放菜干在辛辣汤里来代替新鲜蔬菜。(Kuzhmabu是一种辛辣的液体菜肴,配米饭食用)
As it can be used in two ways mentioned above, salt is not added to these vattal in the beginning.
因为上面提到的两种方法都可以使用,所以在开始的时候盐是不必加到这些菜干里的。
